Beat ‘Cuse Pasta <sadly didn’t work on game night :( …>
Ingredients: 1 box squash-tomato pasta (its a new veggie filled pasta by Barilla), 6 strips of bacon chopped, 2 diced zucchinis, 2 cups diced mushrooms, 1.5 cups frozen peas, 2 cups chopped kale, 1 onions, 14 oz pureed tomato, 4 oz tomato paste, 2 tsp garlic powder, 2 tsp dried oregano, 2 tsp fried parsley, 1 tbsp basil, pepper, salt
- Dice HALF an onion and sautee in a large pot with some oil.
- Add tomato puree and seasonings.
- Add tomato paste. Turn on a low heat and let simmer on the side, stirring occasionally.
- In large frying pan add bacon, half diced onion, and mushrooms. Let cook for 2-3min.
- Add zucchini, stir and let cook 2min.
- Add peas and turn down on a low heat.
- When 20min away from serving bring water to a boil. Add pasta and cook for 7min.
- When 10 min away from serving add kale to the frying pan.
- Drain pasta and add to the sauce along with the mixture from the frying pan.
- Enjoy!

Oh… My…. Goodness. We have found the holy grail. Inexpensive, delicious, healthy, Asian food that doesn’t leave you feeling gross afterward! My friend described as Asian Chipotle except infinitely better… and as it turns out, it is owned by the same company as Chipotle. When I was there I ordered the brown rice bowl with chicken and pork meatballs, long bean, green curry, green papaya slaw, and peanuts (pictured above). Also for context, I just got this after a rough morning of taking a practice GRE with a huge… headache. It was exactly what I needed, wholesome, filling, and flavorful. I think it was only something like $7/8.
